Recipe : Walnut Cake

Discovering a region, learning it’s history through traditional recipes, typical dishes, a way to better understand a regions specialties and treasures, this is the adventure you have shared with Julie Andrieu on her show touring around France.

After the television program Carnets de Julie en Périgord that was broadcasted on the 27th of october, here is one of the recipes shown on the show :

Ingredients (for 6 people)

150 g of walnuts + 8 whole walnuts
150 g of sugar
1 pinch of salt
100 g of butter
3 large eggs
75 g of flour (2 heaped tbsp)

For the topping :
115 g of chocolate at 55 %
25 g of butter

Preheat the oven to 200° (without fan).  Shred the walnuts in a processor. Add half of the sugar and the salt to the walnuts. Melt the butter on the stove, and then remove from the heat and mix in the rest of the sugar. Stir the butter and sugar into the previous mixture. Add the eggs one by one to the mixture, and then add the flour. Butter a cake tin (about L25cm). And then pour the mixture into the tin, and cook for 20 minutes.
Once the cake is cooked take it out of the oven. In a pan on medium heat, melt the butter and chocolate together. Spread the mixture on the top of the cake, and leave to set for 15 minutes. Then with a fork draw streaks on the top of the cake. Place the 8 whole walnuts on the top of the cake. Put in the fridge and serve cold. The cake can be kept in the fridge for a week.
